Hold the brake pedal down about an inch or so...this should keep the system from gravity feeding all the fluid out while you are swapping over and make bleeding a piece of cake. Then leave the bleeders open in the new calipers, unblock the pedal and see if it will gravity bleed and fill the calipers...if it does, you are finished as long as you don't let the reservoir go empty while filling the calipers
